I piatti che si possono gustare alla Trattoria La Paglia sono tutti eccellenti. Tra queste squisite ricette, meritano di essere menzionati le sarde a beccafico, un piatto tipico del catanese, la pasta con i ricci di mare e la bottarga, e gli spaghetti al nero di seppie. A cui far seguire, in stagione, i masculini (alici lucidissime dalla forma allungata) che vengono gettati nell'olio bollente, serviti, poi, con aglio, prezzemolo e una spolverizzata di pecorino piccante grattugiato.

La maestria della cucina si esercita anche nei dessert, tra i quali un delizioso sorbetto alle mandorle.
